How to make Grissini

Grissini Definition
Ingredients:
A)- 250 Bread flour
- 7 g salt
- 10 g sugar
- 10 g instant yeast
B) 150 ml cold water
C) 35 g ShorteningProcedure:
- Mix A evenly, add B and knead to form a rough dough.
- Mix C and knead until smooth and soft.
- Let to proof for 45 minutes.
- Form into ball, let standing for further 15 minutes.
- Spread into a sheet of 12cm x 50 cm
- Cut and stretch into slices of 1 cm x 18 cm
- Roll up to form sticks.
- Roll in sesame seeds.
- Put in a baking tin, sprinkle with some water over the sticks.
- Let proof for further 10 minutes.
- Bake in oven of 220oC for 15 minutes.
- Let it cool down and bake for further 15 minutes at 120oC.
- Take out and serve.
Tips: Spread with some water to make rolling easier.
