How to make Grissini

  • Grissini Definition


    Ingredients:
    A)

    1. 250 Bread flour
    2. 7 g salt
    3. 10 g sugar
    4. 10 g instant yeast

    B) 150 ml cold water
    C) 35 g Shortening

    Procedure:

    1. Mix A evenly, add B and knead to form a rough dough.
    2. Mix C and knead until smooth and soft.
    3. Let to proof for 45 minutes.
    4. Form into ball, let standing for further 15 minutes.
    5. Spread into a sheet of 12cm x 50 cm
    6. Cut and stretch into slices of 1 cm x 18 cm
    7. Roll up to form sticks.
    8. Roll in sesame seeds.
    9. Put in a baking tin, sprinkle with some water over the sticks.
    10. Let proof for further 10 minutes.
    11. Bake in oven of 220oC for 15 minutes.
    12. Let it cool down and bake for further 15 minutes at 120oC.
    13. Take out and serve.

    Tips: Spread with some water to make rolling easier.
